The best cocktail ever – Aussie Caipirinha

You guys are in for a treat today. My cocktail journey has turned out to be surprisingly easy, super fun and so very delicious.  I have been ably assisted by my friend Sophie, who is both my painting and drinking partner. We both agree that this is the most delicious cocktail we have ever had. Technically I was trying to make a Caipirinha, which is Brazil’s national cocktail. I sampled this at Kinn Thai in the city, which has a great cocktail menu, if you can’t be bothered making this yourself, as well as amazing food.  It is traditionally made with Cachaça (fermented sugar cane rum), sugar and lime.  It turns out that finding Cachaca is actually quite difficult. I did however find an Australian white rum sugarcane liquor called Cocomo, which is kinda similar and produces something equal, if not excelling, the original. Let’s get into it!

Ingredients

  • 1 shot Cocomo white rum 
  • 1 lime
  • 1/4 cup soda water
  • Ice cubes
  • Sugar Syrup: 1 cup brown sugar, 1 cup water

Tools: Cocktail shaker

Cooking Directions

  1. Combine the 1 cup of sugar with 1 cup water in a saucepan on a medium heat and stir to combine. It will take about 5 minutes for the sugar to fully incorporate. Take off the heat and allow to cool.
  2. Squeeze the juice from one lime into a cocktail shaker, add one shot of the white rum and one shot of sugar syrup. Put the lime remains in a large cocktail glass with lots of ice.
  3. Shake everything together, pour into the glass and then top off with soda water. That’s it, you’re done!
