Chicken Pulao is an Indian chicken and rice dish, often compared to a biryani. There are regional variations all over India but the dish is particularly popular in the Hyderabad province.
This region is a cultural hot pot, with a continuous influx of migrants from all over the world creating a rich and diverse food culture. What makes this dish special is the layering of ingredients to produce complex flavours. Marinated chicken, spices, onions and basmati rice are layered in one pot and allowed to cook together, blending the flavours. Colour is provided by slowly caramelising the onions before the dish is constructed. This is a dish commonly served at family dinners and many roadside stalls offer the dish for lunch time. It is usually served with a raita and a fresh salad to produce a complete meal.
