Grandma’s Chocolate Hedgehog Slice

Hello hungry peoples,

Today we are discussing Hedgehog. My grandmother’s Hedgehog to be precise. I have never met anyone who didn’t like this (or they were really good at lying convincingly). This used to be one of the staples in my school lunch box and I jealously guarded its recipe. I am the only hedgehog supplier around here thank you very much. Since I have moved out of a hedgehog based economy I thought I would finally share it with the world. It is a pretty simple recipe but it is oh so delicious. No hedgehogs are actually harmed in the construction of this slice, that is just what my hubby tells my daughter to make sure she is suitably traumatised.

Ingredients

  • 1 packet Arnotts coffee biscuits
  • 125 g butter
  • 2/3 cup caster sugar
  • 2 tbsp cocoa
  • 1 egg
  • 1 tsp vanilla paste

Cooking Directions

  1. Get a pack of coffee biscuits and smash them to bits. I usually place them in a freezer bag and go at them with a rolling pin. My grandma used to cover them with a table cloth and whack them but this results in bits of tea towel fluff which isn’t as tasty as you would imagine.
  2. Place in a small saucepan 125 g butter, 2/3 cup caster sugar and 2 tbsp of cocoa. Melt over a medium heat until the ingredients unite into a sticky delicious mess. Try to not heat the mixture too much as this will make one of the next steps harder. Just get the butter and sugar incorporated.
  3. Add 1 tsp of vanilla paste and mix.
  4. Now comes the one tricky bit: Crack an egg into a small bowl, drop the egg in the mixture and whisk furiously. If you go too slow you will have bits of scrambled egg in your hedgehog (super gross!). The small saucepan and pre-cracking the egg makes it easier to prevent this tragedy.
  5. In a large bowl mix the chocolate mixture into the broken biscuits. Press the mixture into a baking dish and chill. I find one mixture comfortably fills a 10 cm by 20 cm dish. The whole thing should be set in 2 hours.
  6. Cut up and try to not eat them all once!
