Fluffernutter cookies

Hello hungry peoples,

The kids and I ventured to DFO as there was an amazing boot sale on. To keep the kids happy we also ventured to the American candy store. The kids bought all kinds of random stuff but I had my heart set on finally trying some marshmallow fluff. It is as it sounds, literally marshmallow in a jar and there are a whole heap of American recipes based around using it. I bought two jars so I could make all the things but one mysteriously vanished from the cupboard. I am sure the empty jar is probably hidden somewhere in the kids room. If you don’t have access to marshmallow fluff there are lots of recipes for making your own such as here.

With my sole remaining jar I decided to go classic with the recipe. A fluffernutter is a sandwich made using white bread, peanut butter and marshmallow fluff. Instead of using white bread I decided to go with biscuits to encase the fillings. I also drizzled melted chocolate on top because….why wouldn’t you?

OK, I am not gonna lie…..these biscuits are just too much. So sugary that my teeth literally hurt when  I ate them. I wasn’t going to keep the recipe but everyone else in my family said they were amazing and I was wrong. Do you dare to try……..?

Fluffernutter Cookies

Ingredients

  • 250 g butter
  • 2 cups plain flour
  • 1 cup icing sugar
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp vanilla paste
  • 1/2 cup marshmallow fluff
  • 1/2 cup dark chocolate chips
  • 1/2 cup peanut butter

Cooking Directions

  1. Preheat oven to 180°C
  2. First to make the biscuits, cream room temperature 250 g butter and 1/4 cup icing sugar.
  3. Add 2 cups plain flour and mix. Wrap batter and place in fridge for 20 minutes. This helps it stick together. Once it is taken out you will need to knead the dough so that it becomes supple and easy to roll biscuits.
  4. Remove squash ball sized portions, roll into a ball and place on a lined baking tray. Once you have finished press the biscuits with a fork.
  5. Bake in the oven until golden (about 10-15 minutes).
  6. Let the biscuits cool and then use peanut butter and marshmallow fluff to join two together.
  7. Melt the dark chocolate in the microwave (zap for 45 seconds at a time until melted). Drizzle on top of the cookies. That’s it, you’re done!
